Preheat oven to 180 °C (350 °F). Line a baking tray with parchment paper.

Blend sweet potato until completely smooth.

Stir in tahini, melted coconut oil, maple syrup, and vanilla until well combined.

Add coconut flour, cinnamon, ginger, baking soda, and salt. Mix into a thick dough — let it sit for 2-3 minutes so coconut flour absorbs moisture!

Fold in chocolate chips!

Scoop tablespoon-sized balls of dough onto the tray and flatten slightly (they won’t spread much due to coconut flour)
